Truffle Mashed Potatoes

Fennel Spiced Carrots

Wilted Kale

Pink Peppercorn Butter

Method

Steak

  1. 1

    Prepare the Ribeye Steak

Take the ribeye steak out of the refrigerator and let it rest at room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

  2. 2

    Grill the Steak

Preheat the grill to medium-high heat. Brush the steak with olive oil. Grill the steak for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from the grill and let it rest for about 5 minutes before slicing.

Truffle Mashed Potatoes

  1. 3

    Cook the Potatoes

Peel and cut the russet potatoes into quarters. Place them in a large pot of salted water and bring to a boil. Cook for about 15-20 minutes, or until tender.

  2. 4

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add heavy cream, butter, truffle oil, and salt. Mash until smooth and creamy.

Fennel Spiced Carrots

  1. 5

    Prepare the Carrots

Peel the carrots and cut them into sticks. In a large skillet, heat olive oil over medium heat. Add the fennel seeds and sauté for about 1 minute.

  2. 6

    Cook the Carrots

Add the carrot sticks to the skillet, season with salt, and cook until tender, about 8-10 minutes, stirring occasionally.

Wilted Kale

  1. 7

    Sauté the Kale

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 8

    Wilt the Kale

Add the kale to the skillet, season with salt, and cook, stirring often, until wilted and tender, about 5 minutes.

Pink Peppercorn Butter

  1. 9

    Make the Butter

In a small bowl, combine softened butter, pink peppercorns, and lemon juice. Mix until well combined.

  2. 10

    Serve the Butter

Place a dollop of pink peppercorn butter on top of the grilled ribeye steak just before serving.
