    Prepare the Chicken Chashu

    If you haven't made chicken chashu beforehand, prepare it by poaching chicken thighs in a mix of soy sauce, mirin, and garlic until tender. Slice thinly.

    Cook the Ramen Noodles

    Bring a pot of water to a boil. Cook the ramen noodles according to package instructions, usually around 4-5 minutes. Drain and set aside.

    Prepare the Soup Base

    In a large pot, heat the chicken paitan soup over medium heat. Stir in the kimchi tare and garlic oil, and let simmer for a few minutes to combine flavors.

    Cook the Eggs

    In a separate pot, boil water and gently add the whole eggs. Boil for 6-7 minutes for a soft-boiled egg. Remove, cool in ice water, then peel.

    Assemble the Ramen Bowl

    In a large bowl, place a portion of cooked ramen noodles. Ladle the hot chicken paitan soup over the noodles. Top with sliced chicken chashu, kimchi, mushrooms, bean sprouts, and green onions.

    Halve the soft-boiled eggs and place them on top of the ramen. Drizzle with chili oil and sprinkle with toasted sesame seeds.
