Chowder Ingredients

Method

Chowder Preparation

  1. 1

    Prepare the Cauliflower

Remove the leaves and stem from the cauliflower. Cut it into florets and steam or boil until tender, about 10-12 minutes. Drain and set aside.

  2. 2

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and minced garlic. Sauté for about 5-7 minutes or until the onion is translucent.

  3. 3

    Add Potatoes and Broth

Add the diced potatoes to the pot and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the potatoes are tender.

  4. 4

    Combine Ingredients

Add the steamed cauliflower and sweet corn to the pot. Stir well to combine.

  5. 5

    Blend for Creaminess

Using an immersion blender, blend the chowder until smooth and creamy. If you don’t have an immersion blender, you can transfer portions to a regular blender. Be careful with the hot liquid.

  6. 6

    Season the Chowder

Stir in the nutritional yeast, salt, black pepper, and paprika. Adjust seasoning to taste.

  7. 7

    Serve

Ladle the chowder into bowls and garnish with fresh chives. Enjoy your vegan corn chowder!
