Method

Preparation

  1. 1

    Prepare the Proteins

Cut the chicken breast into small bite-sized pieces. In a separate bowl, mix the ground turkey with salt, pepper, and dried herbs. For the salmon, you can either leave it whole or cut it into bite-sized pieces.

  2. 2

    Cook the Grains

In a medium pot, bring 2 cups of water to a boil. Add brown rice and a pinch of salt. Cover and reduce the heat to low, cooking for about 40 minutes until tender. For quinoa, in another pot, bring 1 cup of water to a boil, add quinoa, and simmer for 15 minutes until fluffy.

Cooking

  1. 3

    Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Then add diced carrots and cook for 3-4 minutes until they start to soften. Add sweet potato and green beans, cooking for another 5 minutes.

  2. 4

    Add Proteins

To the skillet, add the chicken and ground turkey. Cook for about 7-10 minutes until the chicken is cooked through. Add the salmon and chopped spinach last, cooking for another 3-5 minutes until the salmon is cooked and the spinach is wilted.

  3. 5

    Combine and Season

Once all proteins and vegetables are cooked, combine them with the cooked brown rice and quinoa. Stir well to incorporate. Season with dried thyme, oregano, salt, and pepper to taste.

Serving

  1. 6

    Serve and Store

Serve the mixture in bowls, either warm or at room temperature. Any leftovers can be stored in airtight containers in the fridge for up to 3 days.
