Meat Filling

Method

Preparation of the Filling

  1. 1

    Cook the Pork

In a large skillet over medium heat, add the ground pork. Cook, breaking it apart with a spatula, until it is browned and cooked through, about 5-7 minutes.

  2. 2

    Add Aromatics

Add the minced garlic, chopped shallots, and Thai red chili to the skillet. Sauté for an additional 2-3 minutes until the shallots are soft and fragrant.

  3. 3

    Season the Mixture

Stir in the fish sauce, brown sugar, and lime juice. Cook for another 2 minutes, allowing the flavors to meld together.

  4. 4

    Finish with Herbs

Remove the skillet from heat and add the chopped cilantro and green onions. Stir well to combine.

Assembly

  1. 5

    Prepare the Lettuce

Carefully separate the romaine lettuce leaves from the head, keeping them whole for easy filling.

  2. 6

    Serve

Spoon a generous amount of the pork filling into each lettuce leaf. Optionally, sprinkle with crushed peanuts for added texture.
