    Activate Yeast

    In a small bowl, combine warm water, granulated sugar, and active dry yeast. Stir gently and let it sit for about 5 minutes until frothy.

    Make Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture along with the melted unsalted butter. Mix until a dough forms.

    Knead Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape Pretzel Bites

    Preheat the oven to 425°F (220°C). Once the dough has risen, punch it down and divide it into small pieces (about 1-inch each). Roll each piece into a ball.

    Prepare Baking Soda Bath

    In a large pot, bring 4 cups of water to a boil and add baking soda. Carefully drop each pretzel bite into the boiling water for about 30 seconds, then remove and drain on paper towels.

    Bake

    Place the pretzel bites on a parchment-lined baking sheet. Sprinkle with coarse sea salt and bake in the preheated oven for 12-15 minutes or until golden brown.

Cheese Sauce

    In a medium saucepan over medium heat, melt the unsalted butter. Once melted, whisk in the all-purpose flour and cook for about 1-2 minutes until lightly golden.

    Slowly whisk in the milk, ensuring there are no lumps. Continue to stir until the mixture thickens, about 3-5 minutes.

    Remove the saucepan from heat and stir in the shredded cheddar cheese, garlic powder, and salt until the cheese is melted and the sauce is smooth.
