Mix Filling
In a large bowl, combine the sautéed vegetables, Maine lobster meat, cream cheese, mayonnaise, chopped cilantro, salt, and black pepper. Mix until well combined and set aside.
Puff Pastry Assembly

Prepare Puff Pastry
Preheat your oven to 400°F (200°C). On a floured surface, roll out one puff pastry sheet to fit a pie dish, making sure to cover the bottom and sides.

Fill the Pie
Spoon the lobster filling into the prepared puff pastry shell, spreading it evenly.

Top with Puff Pastry
Roll out the second puff pastry sheet and place it over the filling. Seal the edges by crimping with a fork. Cut a few slits in the top to allow steam to escape.
Baking

Bake the Pie
Place the pie in the preheated oven and bake for 25-30 minutes or until the pastry is golden brown and flaky.

Once baked, remove the pie from the oven and let it cool for a few minutes before slicing. Serve warm.
