Hummus Preparation

    Prepare the ingredients

    Drain and rinse the canned chickpeas under cold water. Peel the garlic cloves.

    Blend the hummus

    In a food processor, combine the chickpeas, tahini, lemon juice, garlic, olive oil, ground cumin, salt, and water. Blend until smooth, scraping down the sides as necessary.

    Adjust the consistency

    If the hummus is too thick, add more water, one tablespoon at a time, until you reach the desired consistency.

    Season the hummus

    Taste the hummus and adjust the seasoning with more salt, lemon juice, or garlic as needed. Blend again to incorporate.

    Serve

    Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle with paprika.

Pita and Veggie Preparation

    Warm the pita

    Preheat your oven to 350°F (175°C). Place the pita bread on a baking sheet and warm in the oven for about 5-7 minutes or until heated through.

    Prepare the veggies

    Wash and cut the seasonal veggies into sticks or slices: cut the carrots, cucumbers, bell peppers, and celery as desired.

    On a serving platter, arrange the warm pita alongside the prepared veggie sticks. Serve with the housemade hummus.
