Cooking Noodles

Boil Water
In a large pot, bring 1 liter of water to a rolling boil.

Cook Noodles
Add the semolina noodles and 1 tsp of salt to the boiling water. Cook according to package instructions, usually about 8-10 minutes, until al dente.

Drain and Cool
Once cooked, drain the noodles in a colander and rinse under cold water to stop the cooking process. Set aside.
Making Peanut Sauce

Combine Ingredients
In a mixing bowl, combine the peanut butter, soy sauce, lime juice, maple syrup, Sriracha, minced garlic, grated ginger, and coconut milk.

Whisk Together
Whisk the mixture until smooth and creamy. Adjust the spice level by adding more Sriracha if desired.

Add Herbs
Stir in the chopped cilantro and green onions until evenly distributed.
Assembling the Dish

Combine Noodles and Sauce
In a large bowl, toss the cooled noodles with the peanut sauce until evenly coated.
