Brisket Preparation

Sear the Brisket
In a large skillet, heat the olive oil over medium-high heat. Season the brisket with salt, black pepper, smoked paprika, and cumin. Sear the brisket on all sides until browned, about 4-5 minutes per side.

Cook the Brisket
Transfer the seared brisket to a slow cooker. Add chopped onion, minced garlic, and beef broth. Cover and cook on low for 8-10 hours or until the brisket is tender and easily shredded.

Make the Salsa
In a mixing bowl, combine diced tomatoes, diced red onion, minced jalapeño, chopped cilantro, lime juice, and salt. Mix well and let it sit for at least 30 minutes to allow the flavors to meld.
