Prepare the Vegetables
Wash and peel the carrots and onion. Chop the carrots into large chunks, slice the celery stalks, and quarter the onion. Leave the garlic cloves whole.

Prepare the Bones
If using raw bones, roast them in a preheated oven at 200°C (400°F) for about 30-40 minutes until browned to enhance flavor. If using pre-cooked bones, skip this step.
Cooking the Broth

Combine Ingredients in Pot
In a large pot or slow cooker, add the beef bones, prepared vegetables, bay leaves, thyme, and peppercorns.

Add Water and Vinegar
Pour in the water and add apple cider vinegar. The vinegar helps extract minerals from the bones.

Bring to a Boil
Bring the mixture to a boil over medium-high heat.

Simmer the Broth
Once boiling, reduce the heat to low and let it simmer for at least 12-24 hours. Skim off any foam that rises to the surface during the first few hours.

Add Optional Ingredients
In the last 30 minutes of cooking, add parsley and season with salt to taste.

Strain the Broth
Once the broth has simmered for the desired time, remove it from heat and strain it through a fine mesh sieve or cheesecloth into another pot or container, discarding the solids.

Allow the broth to cool before transferring it to jars or containers. Store in the refrigerator for up to 5 days or freeze for longer storage.
