Prep the calamari
Pat the cleaned calamari tubes and tentacles very dry with paper towels. Slice the tubes into 1/2-inch rings. Keep tentacles whole or halved if large. Drying thoroughly helps the coating adhere and prevents oil splatter.

Set up dredge and batter
In a shallow bowl whisk together 1 cup all-purpose flour, 1/2 cup cornstarch, 1 tsp kosher salt, 1/2 tsp black pepper, 1/2 tsp smoked paprika, and 1/2 tsp garlic powder. In a separate small bowl combine 1/4 cup flour (for dusting) and a plate for the dry-dust step. Just before frying, stir 1/2 cup cold club soda into the dry mix until a slightly thick, lumpy batter forms — it should coat but not be runny. Keep batter cold; do not over-mix.

Heat the oil
Pour neutral oil into a heavy-bottomed pot or deep fryer to a depth of 2–3 inches (about 4–6 cups depending on vessel). Heat oil to 350–365°F (175–185°C). Use a thermometer for accuracy. Maintain temperature within this range for crisp, non-greasy results.

Dust and batter calamari
Lightly dust a portion of the calamari rings and tentacles in the 1/4 cup flour, shaking off excess. Immediately dip the dusted pieces into the cold batter, letting excess drip off. Work in small batches to avoid overcrowding the fryer and to keep batter cold.

Flash fry
Carefully lower battered calamari into the hot oil with a slotted spoon or spider. Fry in small batches (about 6–8 ounces per batch) for 45–75 seconds until pale golden and puffed — do not overcook or they will become rubbery. Maintain oil temperature; it may drop slightly when items are added.

Drain and season
Remove calamari with a slotted spoon and transfer to a wire rack set over a baking sheet or to a plate lined with paper towels to drain. Immediately season with a light sprinkle of flaky finishing salt. Keep cooked calamari in a warm oven (200°F/95°C) for a few minutes if you need to hold batches, but serve as soon as possible for best texture.
Baja crema

While the oil is heating, make the baja crema: in a small bowl whisk together 1/2 cup sour cream, 1/4 cup crema (or thin sour cream), 2 tbsp fresh lime juice, 1 tbsp finely chopped pickled chipotle or minced jalapeño, 1 tsp honey or agave, 1/4 tsp kosher salt and 1/8 tsp black pepper until smooth. Taste and adjust seasoning — add more lime for brightness, a pinch more salt if needed, or a bit more honey to balance heat. Keep chilled until ready to serve.
Plating & garnish

To serve, mound the fried calamari on a platter or individual plates. Spoon small dollops of baja crema alongside or drizzle lightly over a few pieces for contrast. Scatter chopped cilantro and thinly sliced fresh chilies over the calamari. Arrange lime wedges around the plate for squeezing over the fish, and finish with an extra pinch of flaky salt if desired.

Serve immediately so the calamari remains crisp. Leftovers will lose crispness; reheat briefly in a hot oven (425°F/220°C) for 4–6 minutes if needed.
