Chocolate Crust

Preheat oven to 350°F (175°C). Lightly butter a 9-inch (23 cm) springform pan and line the bottom with parchment paper.

Combine chocolate wafer crumbs, 2 tablespoons granulated sugar, melted butter and a pinch of salt in a bowl. Stir until mixture resembles wet sand and holds together when pressed.

Press the crumb mixture evenly into the bottom and about 1/2 inch up the sides of the prepared springform pan using the back of a measuring cup or a flat-bottomed glass to compact it firmly.

Bake crust 8–10 minutes until set. Remove from oven and cool on a rack while preparing filling. Reduce oven temperature to 325°F (160°C).

Caramel Pecan Topping

Prepare the pecans: toast 1 cup pecan halves in a dry skillet over medium heat 4–6 minutes, stirring frequently, until fragrant and lightly browned. Chop and set aside.

Make the caramel: in a medium heavy-bottomed saucepan over medium heat, add 1 cup granulated sugar in an even layer. Without stirring, allow sugar to melt around the edges; when edges start to liquefy, gently swirl the pan to encourage even melting. Use a heatproof spatula to break up any clumps if needed.

Once the sugar is a deep amber (watch carefully — do not burn), reduce heat to low and add the 6 tbsp butter, whisking until melted and incorporated. Remove from heat briefly if it sputters too much.

Slowly whisk in the warm 1/2 cup heavy cream and 1 tbsp corn syrup. Return to very low heat and stir until smooth. Stir in 1/2 tsp sea salt. Let caramel cool 10 minutes.

Stir chopped toasted pecans into the caramel. Reserve 3/4 cup of this caramel pecan mixture to fold into the cheesecake filling (or use the measured 3/4 cup caramel in the filling ingredients). Reserve the rest to spoon over the baked cheesecake as topping. Let the reserved caramel cool to room temperature so it doesn't overly soften the filling.

Cheesecake Filling

Lower oven to 325°F (160°C) if not already set. Prepare a water bath (see step below) and ensure all filling ingredients are at room temperature to avoid lumps.

In a large mixing bowl or bowl of a stand mixer fitted with the paddle, beat the room-temperature cream cheese on medium-low speed until smooth and free of lumps, about 2–3 minutes. Scrape down the bowl.

Add 1 cup granulated sugar and 1 cup packed light brown sugar. Beat on medium speed until combined and creamy, about 2 minutes. Scrape down bowl.

Add eggs one at a time, mixing on low speed and briefly scraping the bowl between each addition — do not overbeat. Mix just until each egg is incorporated.

Add sour cream, vanilla extract, 2 tablespoons flour and 3 pinches of salt. Mix on low speed until smooth and homogenous, about 20–30 seconds. Scrape down bowl.

Fold in 3/4 cup of the cooled caramel pecan mixture and 1 cup chopped toasted pecans gently with a spatula until swirled but not fully uniform (some streaks are fine).

Pour the filling over the cooled chocolate crust, smoothing the top with an offset spatula. Tap the pan gently on the counter to remove large air bubbles.

Place the springform pan in a larger roasting pan. Pour hot (not boiling) water into the roasting pan until it reaches about halfway up the side of the springform pan (water bath). This helps prevent cracking.

Bake at 325°F (160°C) for 55–70 minutes, or until the edges are set and the center still slightly wobbles when the pan is gently shaken. Check at 55 minutes and continue checking every 5–7 minutes.

When done, turn off the oven, crack the oven door and let the cheesecake cool in the oven for 1 hour to reduce shock and prevent cracking.

Remove the cheesecake from the water bath, run a thin knife around the edge to loosen, and cool completely on a wire rack. Once cooled to room temperature, refrigerate uncovered for at least 6 hours or preferably overnight to fully set.

Dark Chocolate Sauce

Place chopped dark chocolate in a heatproof bowl.

Heat 1/2 cup heavy cream in a small saucepan over medium heat until it just begins to simmer (tiny bubbles at the edge). Do not boil.

Pour the hot cream over the chopped chocolate and let sit 1 minute. Add 1 tsp corn syrup (optional) and a pinch of salt, then stir gently until smooth and glossy. Stir in 1 tablespoon butter for extra shine if desired.

Let sauce cool slightly. Keep warm for serving or refrigerate and gently rewarm before use.

Chantilly Cream

Chill a medium mixing bowl and whisk or beaters in the freezer for 10 minutes if possible. Pour 1 cup cold heavy cream into the chilled bowl.

Add 2 tablespoons powdered sugar and 1 teaspoon vanilla extract. Whip on medium-high speed until soft peaks form, about 2–3 minutes. Do not overbeat — stop when cream holds a soft peak for a light, billowy chantilly.

Refrigerate until ready to garnish.

Assembly / Finish

Remove the chilled cheesecake from the springform pan and transfer to a serving plate if desired.

Spoon the reserved caramel pecan topping over the center of the cheesecake, allowing some to cascade toward the edges but leaving the crust visible at the rim. Sprinkle additional chopped toasted pecans over the caramel. If using, lightly scatter a few flakes of sea salt over the caramel for contrast.

Drizzle dark chocolate sauce over the caramel and around the plate as desired. For a decorative finish, pipe or spoon small dollops of chantilly cream around the edge of the cheesecake and top each dollop with a pecan half or extra chocolate drizzle.

Chill assembled cheesecake 20–30 minutes to set the toppings before slicing for cleaner slices. Use a hot, dry knife (wipe between cuts) to slice. Serve chilled or at cool room temperature.
