Method
Prep
chill glass
Place a large coupe or wine glass in the refrigerator or fill with ice water to chill while you prepare the cocktail.

If using fresh strawberries, hulled and chop 2–3 ripe strawberries and muddle them in a shaker or blitz briefly in a blender until smooth. Strain if you prefer a finer texture. Measure 1 oz of purée.
Build & Shake
Add 2 oz spiced rum, 0.75 oz Aperol, 0.5 oz fresh lemon juice, 1 oz strawberry purée, and 0.25 oz simple syrup (optional) into a cocktail shaker.
Fill the shaker with ice (enough to come about 3/4 of the way up). Secure the lid and dry-shake (no ice) for 10 seconds if you want extra foam/texture from the purée, then add ice and shake vigorously for 12–15 seconds until the outside of the shaker is well chilled.
Discard the ice or water from the chilled glass. Double-strain the shaken mixture into the chilled coupe or a wine glass over fresh ice if preferred. This removes strawberry solids and produces a smoother drink.
Finish
Top the cocktail with about 3 oz dry sparkling wine, pouring gently to preserve effervescence. Give a very gentle stir (1–2 rotations) to integrate the sparkling wine with the shaken base without flattening it.
Garnish with a halved fresh strawberry perched on the rim and a lemon twist expressed over the drink and dropped in (or twisted on the rim).
Serve immediately while the sparkling wine is lively.
