Method
Saffron Risotto

Prepare saffron
Place saffron threads in a small bowl and pour 2 tablespoons hot (not boiling) water over them. Let steep for 5–10 minutes until deeply colored.

Warm stock
In a saucepan, keep the stock warm over low heat. Maintain at a gentle simmer; do not boil.

Sauté shallot and toast rice
In a medium heavy-bottomed saucepan, heat 1 tablespoon olive oil over medium heat. Add the chopped shallot and sauté until translucent, about 2–3 minutes. Add the Arborio rice and stir for 1–2 minutes until the edges of the grains look translucent and they smell slightly nutty.

Deglaze with wine
Pour in the 1/2 cup dry white wine and stir until nearly all the liquid is absorbed.

Cook risotto
Begin adding the warm stock one ladle (about 1/2 cup) at a time, stirring frequently. Wait until most of the liquid is absorbed before adding the next ladle. After about 10 minutes of stirring and additions, stir in the saffron and its soaking liquid. Continue adding stock and stirring until the rice is creamy and al dente, about 18–20 minutes total cooking time from first addition.

Finish risotto
Remove from heat and stir in 2 tablespoons butter and 1/2 cup grated Parmesan. Season with 1/2 tsp salt and 1/4 tsp black pepper. Taste and adjust seasoning. Keep risotto warm, covering lightly.
Sautéed Fennel & Kale

Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the thinly sliced fennel and cook, stirring occasionally, until it begins to soften and edges brown lightly, about 6–8 minutes.

Add the sliced garlic and cook 30–45 seconds until fragrant but not browned.

Add the chopped kale and toss to combine. If pan looks dry, add the optional 2 tablespoons white wine and deglaze, scraping up any browned bits. Cook until kale is wilted but still bright green, about 4–6 minutes.

Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Keep warm and taste for seasoning.
Herb & Citrus Salad

In a mixing bowl combine chopped mixed herbs and arugula with the orange segments and lemon zest.

In a small bowl whisk together 2 tablespoons extra-virgin olive oil, 1 teaspoon white wine vinegar, 1/2 teaspoon honey, 1/4 teaspoon salt and 1/4 teaspoon black pepper until emulsified.

Dress the salad just before serving and toss gently to combine. Taste and adjust seasoning if needed.
Crispy Skin Atlantic Salmon

Pat the salmon fillets very dry with paper towels, especially the skin. Season both sides with 1 1/2 teaspoons salt divided evenly and 1 teaspoon freshly ground black pepper.

Heat a large nonstick or stainless-steel skillet over medium-high heat until hot. Add 2 tablespoons neutral oil and swirl to coat.

Place the fillets skin-side down in the skillet, pressing gently with a spatula for 10–15 seconds to ensure full skin contact. Reduce heat to medium. Cook skin-side down undisturbed for 5–6 minutes, depending on thickness, until the skin is deep golden-brown and crisp and the fish is cooked about two-thirds of the way up the side.

Flip the fillets carefully and add 2 tablespoons unsalted butter to the pan. Spoon the melted butter over the tops of the fillets while cooking for another 1–2 minutes for medium doneness (internal temperature ~125–130°F / 52–54°C). Cook longer if you prefer firmer salmon.

Remove salmon to a warm plate and let rest for 2 minutes. Serve skin-side up to keep crisp. Offer lemon wedges to squeeze over the fish.

To plate: Spoon saffron risotto onto warm plates, mound sautéed fennel & kale alongside, place the salmon on top or beside the risotto with skin up, and finish with a small handful of herb & citrus salad for brightness.
