Preparation

    Make demerara syrup (if you don't have it ready)

    Combine 2 parts demerara sugar with 1 part hot water (for example 1 cup demerara sugar + 1/2 cup hot water). Stir until fully dissolved, cool to room temperature, then refrigerate. Keeps for several weeks.

    Chill glass

    Place a rocks glass in the freezer or fill with ice water to chill while you build the cocktail.

Cocktail Assembly

    Add aged dark rum (1.75 oz), amaretto (0.5 oz), fresh lime juice (0.75 oz), demerara syrup (0.5 oz), and egg white (0.5 oz, optional) to a cocktail shaker.

    Dry shake (no ice) vigorously for 15–20 seconds to emulsify the egg white and create a silky foam. If not using egg white, skip the dry shake.

    Add ice (about 1 cup) to the shaker and shake again vigorously for 10–15 seconds until well chilled and slightly diluted.

    Discard ice/water from the chilled rocks glass. Strain the cocktail into the glass over a large ice cube or block.

Brûlée Finish & Garnish

    Evenly sprinkle about 1 teaspoon of demerara sugar across the surface of the cocktail foam (or across the top of the liquid if not using egg white).

    Using a kitchen torch, carefully caramelize the demerara sugar until it melts and forms a crisp, amber brûlée crust. Hold the flame a few inches away and move continuously to avoid burning the foam. If you prefer a smokier note, briefly torch a small piece of charred cane sugar or use smoking wood chips to add ember aroma (exercise caution).

    Optionally add 2 dashes of Angostura bitters atop the brûlée and use a toothpick to create a simple pattern.

    Garnish with a lime wheel or twist at the glass rim. Present immediately so the brûlée crust remains crisp. If using the optional 'ember' element, ignite briefly and extinguish just before serving for a theatrical smoky aroma.

Serving

    Serve the Ash & Ember immediately. Advise guests to break through the brûlée crust with a spoon or sip through it to experience the contrast of caramelized sugar, bright lime, nutty amaretto, and warm rum.
