Method

Preparation (common steps)

    Heat water

    Pour fresh filtered water into a kettle and heat. Temperature depends on tea type (see specific steeping below). For black teas (Orange Pekoe, Earl Grey, Chai, Decaf Orange Pekoe) bring to a full boil ~100°C / 212°F. For green tea bring to about 175–185°F (80–85°C). For peppermint and chamomile use near-boiling 95–100°C / 203–212°F.

    Measure tea

    Place 1 teaspoon of loose leaf tea or 1 tea bag into an infuser or directly into a cup per 8-ounce (1 cup) serving. If preparing multiple cups, scale by number of servings. Use 1 tsp per cup as a guideline.

Steeping by tea type

    Orange Pekoe (black tea)

    Pour freshly boiled water (100°C / 212°F) over the tea. Steep 3–5 minutes depending on desired strength (3 minutes for lighter, 5 for robust). Remove infuser or tea bag to avoid bitterness. Add milk and sweetener if desired.

    Earl Grey

    Pour freshly boiled water over the Earl Grey. Steep 3–4 minutes. Remove tea. Optionally add a splash of milk or a slice of lemon and sweeten to taste. Bergamot aroma is best when not over-steeped.

    Chai

    For a stronger chai, simmer loose chai with water (and optional fresh ginger slice) for 3–4 minutes, then add 1 tablespoon milk per cup and simmer 1–2 more minutes. Strain into cup. Sweeten to taste with sugar or honey.

    Decaf Orange Pekoe

    Treat like Orange Pekoe: pour boiling water and steep 3–5 minutes. Remove tea. Serve plain or with milk and sweetener as preferred.

    Green Tea

    Let boiled water cool to about 175–185°F (80–85°C) before pouring over green tea. Steep 2–3 minutes to avoid bitterness. Remove tea and serve. Add lemon or a small amount of sweetener if desired.

    Peppermint

    Pour near-boiling water over peppermint leaves or bag. Steep 5–7 minutes for a strong herbal infusion, or 2–3 minutes for lighter flavor. Remove leaves or bag and serve, optionally with a slice of lemon or a little honey.

    Chamomile

    Pour near-boiling water over chamomile flowers or bag. Steep 5–7 minutes for a calming, full-bodied infusion. Remove tea and serve plain or with a drizzle of honey and lemon if desired.

Serving

    Pour the steeped tea into a cup. Taste and adjust with sweetener, milk, or lemon according to the particular tea and your preference. Serve immediately.

    If preparing multiple cups, keep brewed tea covered to retain heat and aroma; consume within 30 minutes for best flavor.
