Preparation

    Prepare the Broccolini

    Rinse the broccolini under cold water and trim the ends. If the stems are thick, you can slice them in half lengthwise to ensure even cooking.

    Make the Vinaigrette

    In a small bowl, whisk together the olive oil, Calabrian chili paste, red wine vinegar, minced garlic, salt, and black pepper until well combined.

    Prepare the Bread Crumbs

    In a separate bowl, combine the panko bread crumbs, grated Parmesan cheese, chopped parsley, and melted butter. Mix until the bread crumbs are evenly coated.

Grilling

    Grill the Broccolini

    Preheat your grill to medium-high heat. Toss the prepared broccolini with half of the vinaigrette. Place the broccolini on the grill and cook for 4-5 minutes, turning occasionally until they are tender and lightly charred.

    Add the Bread Crumbs

    Once the broccolini is grilled, remove it from the grill and sprinkle the bread crumb mixture over the top. Return the broccolini to the grill for an additional 1-2 minutes to toast the bread crumbs and melt the cheese slightly.

Serving

    Transfer the grilled broccolini to a serving platter. Drizzle the remaining vinaigrette over the top and serve warm.
