Method

Dessert 1: Chocolate Mousse

    Melt the Chocolate

    Chop the dark chocolate into small pieces and melt it over a double boiler or in the microwave until smooth.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Reserve some for topping if desired.

    Prepare the Egg Mixture

    In another bowl, beat the eggs and sugar together until pale and frothy. Add in the vanilla extract.

    Combine Ingredients

    Gently fold the melted chocolate into the egg mixture, then fold in the whipped cream until fully incorporated.

    Chill

    Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.

Dessert 2: Lemon Tart

    Prepare the Pastry

    Preheat the oven to 180°C (350°F). Roll out the shortcrust pastry and fit it into a tart pan. Prick the base with a fork.

    Blind Bake

    Line the pastry with parchment paper, fill with baking weights, and bake for 15 minutes. Remove the weights and bake for another 10 minutes until golden.

    Make the Lemon Filling

    In a bowl, whisk together the eggs, lemon juice, sugar, and melted butter until smooth.

    Bake the Tart

    Pour the filling into the baked tart shell and bake for 25-30 minutes until set. Let cool before serving.

Dessert 3: Vanilla Panna Cotta

    Soak Gelatin

    Soak the gelatin sheets in cold water for about 5-10 minutes until soft.

    Heat Cream and Sugar

    In a saucepan, heat the heavy cream and sugar over medium heat until the sugar dissolves. Add the vanilla bean (split and scraped).

    Combine Gelatin

    Remove the cream mixture from heat. Squeeze excess water from the gelatin and add to the warm cream, stirring until dissolved.

    Chill the Mixture

    Pour the mixture into molds and refrigerate for at least 4 hours or until set.

Dessert 4: Berry Compote

    Prepare the Berries

    In a saucepan, combine the mixed berries, sugar, and lemon juice.

    Cook the Compote

    Cook over medium heat until the berries break down and the mixture thickens, about 10-15 minutes.

    Cool and Serve

    Let the compote cool before serving over the panna cotta or alongside other desserts.
