Amaretto Crème Brûlée

    Prepare the Oven

    Preheat your oven to 325°F (160°C) and place a large baking dish in the oven.

    Heat the Cream

    In a saucepan over medium heat, combine the heavy cream and half of the granulated sugar. Stir until the sugar has dissolved and the cream is just about to boil. Remove from heat.

    Mix Egg Yolks

    In a separate bowl, whisk together the egg yolks, the remaining granulated sugar, vanilla extract, and amaretto liqueur until smooth.

    Combine Mixtures

    Slowly pour the hot cream mixture into the egg yolk mixture while whisking constantly to temper the yolks and prevent them from cooking.

    Strain the Mixture

    Strain the mixture through a fine mesh sieve into another bowl to remove any cooked egg bits.

    Fill Ramekins

    Pour the mixture evenly into ramekins and place them in the baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.

    Bake

    Bake in the preheated oven for about 30-35 minutes, or until the edges are set but the center is slightly jiggly.

    Cool and Chill

    Remove the ramekins from the water bath and allow them to cool to room temperature. Refrigerate for at least 2 hours, or overnight.

    Caramelize the Top

    Before serving, sprinkle a thin layer of brown sugar on top of each crème brûlée. Using a kitchen torch, caramelize the sugar until golden brown and crispy.

    Heat the Cream

    In a saucepan, heat the heavy cream over medium heat until it just begins to simmer.

    Melt the Chocolate

    Remove from heat and add the dark chocolate chips. Stir until the chocolate is fully melted and the mixture is smooth.

    Stir in the vanilla extract until combined.

    Chill the Mixture

    Transfer the mixture to a bowl and cover with plastic wrap. Chill in the refrigerator for about 2 hours or until the mixture is firm.

    Using a melon baller or a spoon, scoop out portions of the chilled chocolate mixture and roll them into balls.

    Coat with Sprinkles

    Roll the truffles in rainbow sprinkles until fully coated.

    For a finishing touch, roll some of the truffles in cocoa powder to give variety.
