Marinated Flat Iron Steak

Roasted Potatoes

Grilled Romas & Fennel

Method

Marinated Flat Iron Steak

  1. 1

    Prepare the Marinade

In a bowl, whisk together olive oil, soy sauce, minced garlic, chopped rosemary, chopped thyme, black pepper, and salt. Mix well.

  2. 2

    Marinate the Steak

Place the flat iron steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

  3. 3

    Grill the Steak

Preheat the grill to medium-high heat. Remove the steak from the marinade and discard the marinade. Grill the steak for about 6-7 minutes on each side for medium-rare, or until desired doneness.

Roasted Potatoes

  1. 4

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 5

    Prepare the Potatoes

Wash and halve the baby potatoes. In a large bowl, toss the potatoes with olive oil, garlic powder, dried oregano, salt, and black pepper until evenly coated.

  3. 6

    Roast the Potatoes

Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until golden and crispy, flipping halfway through.

Grilled Romas & Fennel

  1. 7

    Prepare the Vegetables

Slice the Roma tomatoes in half lengthwise and cut the fennel bulb into wedges.

  2. 8

    Season the Vegetables

Drizzle the halved tomatoes and fennel wedges with olive oil, and season with salt and black pepper.

  3. 9

    Grill the Vegetables

Place the seasoned vegetables on the grill. Grill for about 5-7 minutes per side, or until they are tender and have grill marks.

House Steak Sauce

  1. 10

    Combine Ingredients

In a small bowl, mix together ketchup, Worcestershire sauce, Dijon mustard, brown sugar, garlic powder, onion powder, salt, and black pepper until well combined.

  2. 11

    Taste and Adjust

Taste the sauce and adjust the seasoning with additional salt and pepper if needed. Serve alongside the grilled steak.
