Prepare the Fruit Filling

Slice and Mix Peaches
Wash and slice the fresh peaches, removing the pits. In a large bowl, combine the sliced peaches with granulated sugar, lemon juice, all-purpose flour, and ground cinnamon. Toss until the peaches are well-coated, then set aside to let the juices meld.

In a separate bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Assemble and Bake

Preheat the Oven
Preheat your oven to 350°F (175°C).

Layer the Cobbler
In a greased 9x13 inch baking dish, pour the peach mixture evenly across the bottom. Spoon the cobbler topping over the peaches, spreading it evenly.

Place the baking dish in the oven and bake for 30-35 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.

Remove the cobbler from the oven and let it cool slightly. Serve warm with a scoop of vanilla bean ice cream on top or on the side.
