Prepare the Filet Mignon
Remove the filet mignon from the refrigerator and allow it to sit at room temperature for about 30 minutes. Preheat your grill to high heat.

Season the Beef
Rub the filet mignon with olive oil, then season generously with salt and black pepper on all sides.

Rest the Meat
Remove the filet mignon from the grill and let it rest for 5 minutes before slicing.
Lyonnaise Potatoes

Prepare the Potatoes
Peel the Yukon Gold potatoes and slice them into thin rounds. Rinse under cold water and pat dry.

Cook the Onions
In a large skillet, melt the butter over medium heat. Add the sliced onion and cook until softened and translucent, about 5 minutes.

Prep the Green Beans
Trim the ends of the French green beans and rinse under cold water.

Blanch the Green Beans
Bring a pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop cooking.
