    Prepare the batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Mix well until combined.

    Combine wet ingredients

    In another bowl, whisk together the buttermilk and eggs until smooth.

    Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the chopped green onions and crawfish tails gently.

    Heat the oil

    In a heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

    Fry the beignets

    Using a tablespoon, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Remoulade Sauce
