Prepare the batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Mix well until combined.

Combine wet ingredients
In another bowl, whisk together the buttermilk and eggs until smooth.

Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the chopped green onions and crawfish tails gently.

In a heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

In a medium bowl, combine mayonnaise, Dijon mustard, lemon juice, hot sauce, chopped capers, paprika, garlic powder, salt, black pepper, and chopped parsley. Mix well until smooth.
