Pickling the Onions

    Prepare the Onions

    Thinly slice the red onion using a sharp knife or a mandoline for uniform slices.

    Make the Pickling Brine

    In a medium saucepan, combine apple cider vinegar, sugar, and salt. Bring to a simmer over medium heat, stirring until sugar and salt dissolve.

    Pickle the Onions

    Place the sliced onions into a jar and pour the hot pickling brine over them. Ensure the onions are fully submerged. Let them cool to room temperature, then refrigerate for at least 30 minutes or until ready to use.

Assembling the Salad

    Wash the butter lettuce thoroughly under cold water. Gently pat dry with a kitchen towel or use a salad spinner to remove excess water.
