Prep
- 1
Rim the glass (optional)
If you prefer a salted or spiced rim, rub a lime wedge around the rim of a Collins or highball glass, then dip the rim into a small plate of coarse salt or Tajín. Set the glass aside.
- 2
Fill the prepared glass with ice and set aside.
Mixing
- 3
In a cocktail shaker (or a mixing glass) add the tequila (2 oz), fresh grapefruit juice (3 oz), fresh lime juice (0.5 oz) and agave syrup (0.5 oz).
- 4
Add a handful of ice to the shaker (or enough to chill) and shake vigorously for 8–12 seconds until well chilled.
- 5
Strain the chilled mixture into the prepared ice-filled Collins/highball glass, leaving some space at the top for soda.
- 6
Top with soda water (about 2 oz) and gently stir once or twice to combine without losing too much carbonation.
Finish & Serve
- 7
Garnish with a grapefruit wedge or slice and a lime wheel or wedge on the rim. Optionally squeeze the lime wedge into the drink for extra brightness.
- 8
Taste and adjust sweetness if needed — add up to 0.25 oz more agave syrup if you prefer it sweeter, stirring gently to incorporate.
- 9
Serve immediately while cold and fizzy.
