Juice fruits
If not already done, juice fresh limes and white (or pink) grapefruit. Strain the juices through a fine mesh strainer to remove pulp if you prefer a smoother texture.
- 3
Combine ingredients
In a cocktail shaker, add 2 oz Mount Gay rum, 0.75 oz fresh lime juice, 0.75 oz fresh grapefruit juice, 0.5 oz maraschino liqueur, and 0.25 oz simple syrup.
- 4
Add ice and shake
Fill the shaker with ice (about 6 large cubes). Secure the lid and shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted. This dilutes and chills the cocktail to the proper balance.
- 5
Strain
Dump the ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe using a Hawthorne and a fine mesh strainer (or a fine strainer alone) to catch small ice shards and any pulp.
- 6
Garnish and serve
Express the oils of a grapefruit twist over the drink by holding the twist over the glass and giving it a firm bend, then drop it into the cocktail (or float a lime wheel on the surface). Serve immediately.
