Cocktail

Method

Cocktail

  1. 1

    Make honey syrup

If you don't already have honey syrup, make it first: combine 2 parts honey and 1 part hot water (for example, 4 tablespoons honey and 2 tablespoons hot water). Stir until fully combined and slightly cooled. Chill briefly if needed. Measure 0.75 oz for this recipe. (You can scale syrup as needed; leftover keeps refrigerated for up to 2 weeks.)

  2. 2

    Prepare basil

Gently rinse and dry the basil leaves. Pinch a few leaves between your fingers and clap them once to release aromatics before muddling; reserve one sprig for garnish.

  3. 3

    Muddle

In a cocktail shaker, add the packed fresh basil leaves and the honey syrup. Using a muddler (or the back of a bar spoon), gently muddle the basil about 6–8 times — press to bruise leaves and release oils but avoid pulverizing into bits, which can cause bitterness.

  4. 4

    Combine

Add the white rum, fresh lime juice, and (if using) the optional 0.25 oz simple syrup to the shaker with the muddled basil and honey syrup.

  5. 5

    Shake

Fill the shaker with ice (about 1 cup). Seal and shake vigorously for 12–15 seconds until the shaker is cold to the touch and a good froth forms from aeration.

  6. 6

    Double strain and serve

If a very clear drink is desired, double-strain: place a fine mesh strainer over your coupe or chilled rocks glass and pour the cocktail through both the shaker strainer and the fine strainer to remove basil fragments and small ice chips. If you prefer slightly more texture, a single strain is fine. Optionally, serve over fresh ice in a rocks glass (use the 0.5 cup ice).

  7. 7

    Garnish

Express a lime twist over the top or place a lime wheel on the rim. Slap the reserved basil sprig between your palms to wake the oils and place it gently on top of the drink as an aromatic garnish.

  8. 8

Serve immediately. Taste and adjust on repeat batches: increase honey syrup by 0.25 oz for more sweetness, or add another 0.25 oz lime for brighter acidity. Garnish and enjoy.
