Garnish & Glass Prep
Prepare the glass
Choose a rocks or coupe glass. Run the lime wedge around the rim to moisten it. Spread the coarse salt on a small plate and gently press the rim into the salt to create an even salted rim. Set the glass aside.
Cocktail
Measure and combine
In a cocktail shaker add 2 oz Espolon tequila, 1 oz Cointreau, 1 oz fresh lime juice, and 0.5 oz agave syrup.
Add ice and shake
Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is cold and slightly frosted. This chills and dilutes to the right level.
Strain and serve
Double-strain (using the shaker strainer and a fine mesh if available) into the prepared rocks or coupe glass over fresh ice (for a rocks glass) or without ice (for a coupe).
Garnish and finish
Express a bit of lime oil over the drink by pinching a lime wheel over the surface, then drop the wheel or wedge onto the rim or float it in the drink. If using lime zest, grate a small amount over the top for extra aroma. Serve immediately.
