Chill glass

Place an old-fashioned glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to lightly chill the serving glass.

Combine ingredients

In a mixing glass, add 2 oz Maker's Mark, 0.5 oz Tempus Fugit Crème de Banane, 0.25 oz Frangelico, 0.25 oz pure maple syrup, 0.25 oz orgeat, 2 dashes black walnut bitters and 1 dash Angostura bitters (optional).

Add ice and stir

Fill the mixing glass with enough ice to properly chill (about 6-8 large cubes). Stir gently with a bar spoon for 20-30 seconds until the cocktail is well chilled and slightly diluted (target ~20-25% dilution from the starting spirit volume).

Prepare glass

Dump the ice water from the chilled glass (if used) and add one large clear ice cube to the old-fashioned glass.

Strain

Double-strain the mixed cocktail over the large ice cube in the prepared old-fashioned glass using a Hawthorne and fine strainer (or just a Hawthorne if fine straining is unnecessary).

Garnish - flamed banana peel

Take a fresh banana peel or a thin banana slice. If using a peel: hold a small piece of banana peel (inner side facing the drink) over the glass and carefully squeeze a match or lighter flame near the peel so the oils briefly flame and spray a thin mist of charred banana oil onto the cocktail. If you prefer not to flame, simply express the peel over the drink and rest it on the rim, or float a thin banana slice on top. Be cautious when flaming — do not lean over the glass.

Serve

Serve immediately. Sip slowly to enjoy the interplay of banana, hazelnut, almond, maple and black walnut bitters against the bourbon backbone.
