Pickling Process

Prepare the Okra
Rinse the fresh okra under cold water and trim the stems, leaving about 1/4 inch of the stem intact.

Make the Pickling Brine
In a saucepan, combine the white vinegar, water, kosher salt, garlic cloves, dill seeds, red pepper flakes, black peppercorns, and bay leaves. Bring the mixture to a boil over medium heat, stirring until the salt dissolves.

Pack the Jars
In clean, sterilized jars, pack the okra tightly. Pour the hot pickling brine over the okra, ensuring that they are fully submerged. Leave about 1/2 inch of space at the top of the jar.

Seal the Jars
Wipe the rims of the jars to remove any residue, then seal with sterilized lids and rings.

Process the Jars
Process the jars in a boiling water bath for 10 minutes to ensure they are sealed properly.

Cool and Store
Remove the jars from the boiling water and let them cool completely on a clean towel. Once cool, check the seals and store in a cool, dark place for at least 1 week before consuming.
