Prepare Sugar Bacon
Preheat the oven to 375°F (190°C). In a bowl, mix brown sugar and black pepper. Coat each bacon slice in the mixture, then place on a baking sheet lined with parchment paper. Bake until crispy, about 15-20 minutes. Remove and let cool.
Homemade Bratwurst
Make Bratwurst
In a bowl, combine ground pork, garlic powder, onion powder, black pepper, salt, and nutmeg. Mix well. Rinse hog casings in cold water and soak them. Stuff the mixture into the casings, twist into links, and tie off the ends. Grill over medium heat until cooked through, about 15-20 minutes. Slice when cool.
Pulled Pork
Cook Pulled Pork
Rub the pork shoulder with salt, smoked paprika, and cayenne pepper. Place in a slow cooker with barbecue sauce. Cook on low for 8 hours, or until tender. Shred with forks.
Assembly
Assemble Hogzilla
On each hoagie roll, layer pulled pork, sliced bratwurst, sugar bacon, and pepper jack cheese. Serve with a side of potato chips.
