Cooking Instructions
- 1
Prepare the Duck
Preheat the oven to 375°F (190°C). Score the skin of the duck breast lightly and season both sides with salt and pepper. Place the duck breast skin-side down in a skillet over medium heat and sear for about 6-8 minutes until the skin is crispy. Flip the duck breast and transfer the skillet to the preheated oven. Roast for about 10-12 minutes for medium-rare. Remove from oven and let rest for 5 minutes before slicing.
- 2
Cook the Pasta
In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
- 3
Prepare the Sauce
In the same skillet used for the duck, add olive oil and sauté the chopped scallions and sliced cremini mushrooms over medium heat until softened, about 5 minutes. Add the spinach and cook until wilted. Pour in the heavy cream and Sriracha sauce, stirring to combine, then let simmer for about 3-5 minutes. Stir in the Parmesan cheese until melted and smooth. Season with additional salt and pepper to taste.
- 4
Combine and Serve
Toss the cooked fettuccine in the Sriracha Alfredo sauce until well coated. Plate the pasta and top with sliced duck breast. Garnish with additional chopped scallions if desired.
