Prepare the Chicken
Preheat your oven to 375°F (190°C). Place each chicken breast between two sheets of plastic wrap and gently pound to about 1/2 inch thick.

Layer the Fillings
On each flattened chicken breast, layer 2 slices of prosciutto, a slice of provolone cheese, a peppadew pepper, and a pineapple ring.

Roll and Secure
Carefully roll up each chicken breast tightly and secure with toothpicks or kitchen twine.

Bread the Chicken
Set up a breading station with three shallow dishes: one with flour (seasoned with salt and pepper), one with beaten eggs, and one with bread crumbs. Dredge each chicken roll in flour, dip in egg, and then coat with bread crumbs.

In a large skillet, heat olive oil over medium heat. Add the breaded chicken rolls and cook until golden brown on all sides, about 5-7 minutes.
