Boil Water
In a large saucepan, bring 4 cups of water and 1 teaspoon of salt to a boil over medium-high heat.

Add Grits
Once boiling, slowly whisk in 1 cup of stone-ground grits. Reduce heat to low and cook, stirring frequently, for about 20-25 minutes until thickened and creamy.

Season
Adjust seasoning with salt to taste and keep warm until serving.
For the Shrimp

Prepare Shrimp
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 pound of peeled and deveined shrimp.

Season Shrimp
Sprinkle 1 teaspoon of smoked paprika, 1 teaspoon of cayenne pepper, and salt and pepper to taste over the shrimp. Sauté for about 3-4 minutes until the shrimp are pink and opaque.

Add Garlic and Green Onions
Add 3 minced garlic cloves and 2 chopped green onions to the skillet. Cook for an additional 1-2 minutes until fragrant.

Combine and Serve
Serve the shrimp over the prepared grits, garnishing with additional green onions if desired.
