Serving Suggestions

Method

Preparation of Marinade

  1. 1

    Mix Marinade Ingredients

In a bowl, combine the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Whisk together until fully blended.

  2. 2

    Marinate Steak

Place the flank steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 4 hours for best flavor.

Cooking the Fajitas

  1. 3

    Prepare the Vegetables

While the steak is marinating, slice the bell peppers and onion into thin strips.

  2. 4

    Grill the Steak

Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and discard the marinade. Grill the steak for about 6-7 minutes per side for medium-rare, or until your desired doneness is reached. Transfer the steak to a cutting board and let it rest for 5 minutes.

  3. 5

    Cook the Vegetables

In the same grill pan, add a small amount of oil if needed and grill the sliced bell peppers and onion for about 5-7 minutes until they are tender and slightly charred.

  4. 6

    Slice the Steak

After resting, slice the steak against the grain into thin strips.

Serving

  1. 7

    Assemble the Fajitas

Warm the flour tortillas in a skillet or microwave. On each tortilla, place sliced steak, grilled peppers, and onions. Top with sour cream, guacamole, and fresh cilantro.

  2. 8

    Serve

Serve the fajitas with lime wedges on the side for squeezing over the top.
