Method

Marinade Preparation

  1. 1

    Combine Marinade Ingredients

In a medium bowl, mix together the diced green chiles, minced garlic, olive oil, cumin, paprika, salt, black pepper, and lime juice until well combined.

  2. 2

    Marinate the Pork

Place the pork tenderloin in a resealable plastic bag. Pour the marinade over the pork, ensuring it is evenly coated. Seal the bag and refrigerate for at least 2 hours or overnight for best flavor.

Cooking the Pork

  1. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 4

    Sear the Pork

Heat a large oven-safe skillet over medium-high heat. Remove the pork from the marinade, allowing excess marinade to drip off. Sear the pork tenderloin in the hot skillet for about 3-4 minutes on each side until browned.

  3. 5

    Roast in the Oven

Transfer the skillet to the preheated oven and roast the pork for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

  4. 6

    Rest the Pork

Remove the pork from the oven and let it rest for 5-10 minutes before slicing. This helps retain the juices.

Serving

  1. 7

    Slice and Garnish

Slice the pork tenderloin into medallions. Serve garnished with chopped cilantro and lime wedges on the side.
