Fire-roasted pepper relish

Prepare and roast peppers (if not using pre-roasted)
If using fresh peppers: preheat broiler or grill to high. Place 3–4 large red bell peppers and 2–3 hot red peppers (or jalapeños) on a baking sheet. Broil or grill, turning occasionally, until skins are blackened and blistered on all sides, about 10–15 minutes. Transfer to a bowl and cover tightly with plastic wrap or a lid for 10–15 minutes to steam; this loosens the skins. Peel the skins, remove stems and seeds, and roughly chop the flesh. Pat lightly to remove excess juices.

If using store-roasted peppers, drain any excess liquid and roughly chop peppers. Reserve about 1/4 cup of chopped hot peppers separate from the larger-quantity sweet roasted peppers if you want to control heat.

In a food processor, combine the roasted red bell peppers (about 2 cups) and the roasted hot peppers (about 1 cup). Pulse until a coarse but spreadable texture remains — do not puree to a completely smooth paste unless you prefer a very smooth dip.

If using, add 1 tablespoon smoked or roasted red pepper paste to deepen flavor and pulse to combine.

Prepare the cheese base
Crumble 8 oz firm feta into the bowl of the food processor. Add 4 oz softened cream cheese. Pulse 6–8 times until the cheeses are well combined and form a slightly chunky, spreadable base. Scrape down the sides as needed.

Combine the processed peppers with the cheese base in the food processor. Pulse in 6–10 short bursts until the mixture is homogenous but still has some texture — aim for a thick, spreadable consistency.

Season and finish the dip
Add 2 minced garlic cloves, 1 tablespoon fresh lemon juice, 3 tablespoons olive oil, 1 teaspoon red wine vinegar, 1 teaspoon smoked paprika, 1 teaspoon ground cumin (optional), 1 teaspoon sugar or honey, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper to the processor. Pulse and scrape down the sides, then pulse again until everything is evenly incorporated. Taste and adjust: add more salt, lemon, or honey as needed; add more hot roasted peppers (in small increments) if you want more heat.

If the mixture seems too thick, add up to 1 tablespoon additional olive oil or 1–2 teaspoons water and pulse to reach desired spreadability.

Transfer and garnish
Spoon the tirokafteri into a shallow serving bowl. Smooth the top with the back of a spoon and create a small well in the center. Drizzle 1 tablespoon extra-virgin olive oil over the top. Sprinkle with 2 tablespoons chopped fresh parsley and, if desired, 1 teaspoon crushed red pepper flakes for extra heat and visual contrast.

Refrigerate for at least 30 minutes to let flavors meld (longer — up to 24 hours — is fine). Bring to room temperature for 15–20 minutes before serving.
