Prepare the bread
Tear the stale white bread into small pieces and place in a small bowl. Pour 30 ml (about 2 tablespoons) of milk or water over the bread to moisten. Let sit 5 minutes until softened, then squeeze out excess liquid with your hands and reserve the softened bread. The soaked bread will act as the emulsion base and soften the roe's intensity.

Soften the roe
If your roe is very salty or dense, soak it briefly: place 120 g tarama in a small bowl with 1–2 tablespoons cold water for 3–4 minutes, then gently drain. This step is optional and depends on saltiness—taste a small piece to decide.

Combine main ingredients
In the bowl of a food processor (or a medium mixing bowl if using an immersion blender), add the squeezed bread, the tarama, 1 tablespoon finely grated white onion or shallot, and the optional 1/2 teaspoon very finely minced garlic. Pulse/process briefly until the mixture is uniformly broken down but not completely smooth—about 10–15 seconds in a food processor.

Emulsify oils
With the processor running on low, first add the neutral oil (60 ml) in a slow, steady stream to begin emulsifying. After that is incorporated, add the extra-virgin olive oil (120 ml) in a thin steady stream, allowing the mixture to thicken and become creamy. If mixing by hand with an immersion blender, keep the blender running while slowly pouring in the oils. This gradual addition is key to a stable, silky emulsion.

Adjust acidity and texture
Stop and scrape down the bowl. Add 2 tablespoons fresh lemon juice, 30 ml cold water to loosen if needed, and 1/4 teaspoon black pepper. Pulse or blend briefly to combine. Taste and adjust: add more lemon for brightness, a pinch more pepper, or up to 1–2 tablespoons more neutral oil if the dip is too thick. If the dip breaks or becomes too oily, add another tablespoon of soaked bread or a teaspoon of cold water and blend to bring it back together.

Finish and chill
Transfer the taramasalata to a serving bowl, smooth the top, and optionally drizzle a teaspoon of olive oil over the surface. Cover tightly and chill in the refrigerator for at least 30 minutes to let flavors meld and the texture firm slightly.
