Prepare garlic
Peel the garlic cloves. Crush or finely grate the garlic using a microplane or fine grater. If you prefer a milder garlic flavor, mince and then sprinkle a small pinch of salt over it and let sit for 5 minutes to macerate; then scrape into the yoghurt to include the softened garlic and discard any excess liquid.

Blend base
Place the 2 cups of yoghurt in a medium mixing bowl. Add the 1 tablespoon lemon juice, 1 tablespoon extra-virgin olive oil, and the crushed/grated garlic. Whisk vigorously until smooth and slightly glossy.

Season
Add 1 teaspoon sea salt and 1 teaspoon freshly ground black pepper to the yoghurt mixture. Taste and adjust seasoning. If the yoghurt is too thick for your intended use (dip vs sauce), whisk in up to 2 tablespoons cold water, 1 tablespoon at a time, until you reach the desired consistency.

Add herbs (optional)
Fold in the finely chopped dill and/or mint if using (1 tablespoon each). These herbs brighten and complement the garlic; omit if you want a plain garlic yoghurt.

Finish and serve
Before serving, taste again and adjust salt, pepper, or lemon if needed. Transfer to a serving bowl, drizzle a little extra-virgin olive oil on top (about 1 teaspoon), and sprinkle the minced chives or parsley for garnish if desired. Serve chilled as a dip, sauce for grilled meats/vegetables, or spread.
