Filo-wrapped Baked Feta

    Preheat and prepare

    Preheat the oven to 375°F (190°C). Line a small baking sheet or shallow baking dish with parchment paper or lightly grease it with a little butter or oil.

    Prepare the feta

    Pat the feta block dry with paper towels to remove excess moisture. Lightly dust the feta with the 1 teaspoon of flour — this helps the filo adhere and reduces sogginess.

    Season

    Brush the feta lightly with 1 teaspoon of melted butter and 1/2 teaspoon of olive oil. Sprinkle the black pepper and dried oregano evenly over the top and sides.

    Work with filo

    Unroll the thawed filo sheets and keep them covered with a lightly damp kitchen towel so they don't dry out. On a clean work surface, place one filo sheet, brush it lightly with melted butter (about 1/2 tablespoon). Lay a second sheet on top, offset slightly, and brush again. Repeat until you have stacked all 6 sheets (brush between every 1–2 sheets to ensure pliability).

    Wrap the feta

    Place the seasoned feta block near one edge of the stacked filo. Fold the sides and roll the feta into a snug parcel, tucking the ends underneath. If any edges tear, patch gently with small pieces of filo brushed with butter. Trim any excessively long pastry. Brush the outside of the parcel with the remaining melted butter (about 1–1.5 tablespoons) and a light drizzle of the remaining olive oil to encourage browning.

    Bake

    Place the filo-wrapped feta seam-side down on the prepared baking sheet. Bake in the preheated oven for 20–25 minutes, or until filo is deep golden brown and crisp. Rotate the pan once halfway through baking for even color.

Honey Topping & Garnish

    Warm the honey (optional)

    About 5 minutes before the feta finishes, gently warm the honey in a small saucepan over low heat or in a microwave-safe bowl for 10–15 seconds so it is pourable but not hot. Warming helps it flow into the crisped filo when served.

    Toast nuts

    If using pine nuts or walnuts, heat a small dry skillet over medium heat and toast the nuts, shaking the pan, until fragrant and lightly golden, 2–3 minutes. Remove from heat and set aside to cool.

    Finish and serve

    Remove the baked filo parcel from the oven and let rest on the baking sheet for 2–3 minutes. Transfer to a serving plate. Drizzle the warm honey evenly over the top and allow a little to run onto the plate. Scatter toasted nuts, lemon zest, and herbs over the honeyed parcel. Serve immediately, cutting into the filo to reveal warm, slightly melty feta, and provide small forks or slices for sharing.
