Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave in short bursts (15-20 seconds), stirring frequently until smooth. Set aside to cool slightly.

Combine Yolks and Sugar
Add the granulated sugar to the egg yolks and whisk together until the mixture is pale and creamy.

Incorporate Chocolate
Slowly fold the melted chocolate into the yolk and sugar mixture until fully combined. If using, add the vanilla extract and a pinch of salt.

Whip Egg Whites
Using a clean whisk or electric mixer, beat the egg whites until stiff peaks form. This will give the mousse its light and airy texture.

Fold in Egg Whites
Gently fold the whipped egg whites into the chocolate mixture in three parts, being careful not to deflate the air incorporated into the whites.

Whip the Cream
In a separate bowl, whip the heavy cream until it holds soft peaks. Make sure not to overwhip.

Combine Cream and Chocolate Mixture
Fold the whipped cream into the chocolate mixture until no streaks remain. This will add a rich creaminess to the mousse.

Chill the Mousse
Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.

Once set, serve the chocolate mousse chilled. You can garnish with whipped cream, chocolate shavings, or fresh berries if desired.
