Prepare the Beef
In a large pot, add the beef shank or brisket and cover with water. Bring to a boil, then reduce to a simmer. Cook for about 1.5 to 2 hours until the beef is tender. Remove the beef and let it cool before slicing it thinly.

Make the Broth
In the same pot, add the beef broth, sliced ginger, minced garlic, soy sauce, salt, and pepper. Bring to a simmer and cook for an additional 30 minutes to allow the flavors to meld.

Assemble the Soup
In bowls, place a portion of noodles, top with sliced beef, and ladle the hot broth over the top. Garnish with chopped green onions and coriander leaves.
