Prepare the Ingredients

Wash the bok choy thoroughly, and chop it into bite-sized pieces. Clean the shiitake mushrooms and slice them. Slice the chicken breast into thin strips.

Stir-fry the Chicken

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.

Add Vegetables

Add the shiitake mushrooms to the skillet and stir-fry for another 2-3 minutes until they begin to soften. Then, add the bok choy and continue to stir-fry until the bok choy is wilted, about 2-3 minutes.

Add Sauce and Season

Pour in the oyster sauce, and season with salt and black pepper. Toss everything together to ensure the chicken and vegetables are well coated in the sauce. Cook for an additional 1-2 minutes.

Serve

Remove from heat and serve hot over rice or noodles if desired.
