    Prepare the Tofu

    Drain the tofu and press it to remove excess moisture. Cut it into bite-sized cubes.

    Sauté the Vegetables

    In a large pot, heat a small amount of oil over medium heat. Add the chopped lemongrass, galangal, sliced chili, carrot, and celery. Sauté for 5 minutes until they start to soften.

    Add the Broth

    Pour in the vegetable broth and bring to a boil. Add the mushrooms and tofu cubes, then reduce the heat and simmer for 10 minutes.

    Season the Soup

    Stir in the fish sauce (or soy sauce) and lime juice. Add the bean sprouts and cook for another 2-3 minutes.

    Serve with a Flaming Effect

    Ladle the soup into a flame-safe pot. Drizzle chili oil on top and carefully light it to create a flaming effect. Garnish with fresh cilantro.
