    Prepare the Pork

    Cut the pork tenderloin into bite-sized pieces and toss it with cornstarch until well coated.

    Sauté the Pork

    In a large skillet, heat the vegetable oil over medium-high heat. Add the pork and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.

    Cook the Vegetables

    In the same skillet, add the chopped onion and bell pepper. Sauté until they are tender, about 3-4 minutes.

    Make the Sauce

    In a bowl, mix together soy sauce, brown sugar, rice vinegar, ketchup, minced garlic, and ginger.

    Return the pork to the skillet, add pineapple chunks, and pour the sauce over the top. Stir to combine and cook for an additional 3-5 minutes until everything is heated through and the sauce has thickened slightly.
