Prepare the Vegetables
Chop the red and green bell peppers, onion, and garlic cloves into bite-sized pieces.

Make the Sauce
In a medium bowl, whisk together the ketchup, soy sauce, rice vinegar, brown sugar, and cornstarch. Add water and mix until smooth.

Cook the Vegetables
Heat vegetable oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent.

Add Peppers and Pineapple
Add the chopped bell peppers and pineapple chunks to the skillet. Cook for 5-7 minutes until the peppers are tender.

Combine with Sauce
Pour the prepared sauce over the vegetables and stir well. Cook for another 5 minutes, allowing the sauce to thicken. Season with salt and black pepper to taste.

Serve the sweet and sour mixture hot, preferably over rice or noodles.
