Prepare the filling
In a large bowl, combine ground pork, julienned carrots, bean sprouts, minced garlic, chopped green onions, and soy sauce. Mix well until all ingredients are thoroughly combined.

Soften the rice paper
Fill a shallow dish with warm water and dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable. Lay it flat on a clean surface.

Fill the rice paper
Place a portion of the pork mixture (about 2 tablespoons) in the center of the rice paper. Fold the sides over the filling, then roll from the bottom to the top, ensuring the filling is secure inside the wrapper.

Fry the spring rolls
In a large skillet, heat vegetable oil over medium heat. Once hot, carefully add the spring rolls (a few at a time) and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve the spring rolls hot, with dipping sauce of your choice.
