Prepare the filling
In a large bowl, combine the cooked pork (or tofu), cooked rice noodles, carrot, cucumber, red bell pepper, and cilantro. Toss together gently.

Soften rice paper wrappers
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens. Remove and lay it flat on a clean surface.

Fill the wrappers
Place about 2 tablespoons of the filling mixture in the center of the wrapper. Fold the sides over the filling, then roll from the bottom up to enclose the filling completely. Repeat with remaining wrappers.

Assemble the bowl
In serving bowls, add a bed of mixed greens. Cut the spring rolls in half and place them on top of the greens.

Serve
Drizzle soy sauce over the bowl and serve with peanut or hoisin sauce on the side for dipping.
