Prepare the Duck
Trim the duck breast of excess fat and score the skin in a crosshatch pattern.

Make the Batter
In a mixing bowl, combine flour, cornstarch, salt, and black pepper. In another bowl, whisk together eggs and water. Gradually add wet ingredients to the dry mixture until smooth.

Heat the Oil
In a deep saucepan, heat oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Duck
Dip the duck breast in the batter and carefully place it in the hot oil. Fry for about 6-8 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Make the Sauce
In a small saucepan, combine soy sauce, sesame oil, honey, rice vinegar, garlic, and ginger. Bring to a simmer and cook for 3-4 minutes until slightly thickened.

Serve
Slice the fried duck and drizzle the sesame sauce over the top. Sprinkle with sesame seeds before serving.
